Paula Deen Banana Nut Muffins:
Ingredients:
2 cups all purpose flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup mashed ripe banana
1/2 cup vegetable oil
2 large eggs
2 tablespoons milk
1 cup chopped pecans
Garnish: confectioners’ sugar, fresh raspberries
Instructions:
1. Preheat oven to 400*. Lightly grease 15 cups of muffin pan
2. In a large bowl,combine flour,sugar,baking soda,baking powder,cinnamon, and salt.
3. In a medium bowl, combine banana,oil,eggs,and milk.add to flour mixture stirring until just combined. Stir in pecans. Spoon batter evenly into prepared muffin cups. Bake for 12-15 minutes, or until golden brown. Let cool on wire racks. Garnish with confectioners’ sugar and fresh raspberries if desired.
Makes 15 servings
